Rainbow Avocado Toast

Ingredients
1 medium avocado, pitted and peeled
2 tsp fresh lemon juice
4 slices 100% whole wheat very thin bread
1/4 cup shredded carrots
4 cherry tomatoes, quartered
1/4 cup drained and rinsed reduced sodium black beans
1/4 cup finely chopped broccoli
1/4 cup finely chopped yellow bell pepper
2 tsp extra virgin olive oil
Directions
1. In small bowl, mash avocado, lemon juice, and 1/8 teaspoon black pepper with fork. Makes about ½ cup.
2. Toast bread; spread with avocado mixture. Arrange carrots, tomatoes, beans, broccoli and bell pepper in rows over avocado mixture; drizzle with oil.
